Longtime Sharon Springs, Kansas resident Amy Jo (Elmore) Pancake, 42, died Wednesday March 6, 2013, at Baptist Saint Anthony’s Health System in Amarillo, Texas.
She was born June 17, 1970, at Goodland, Kansas, the daughter of Jerice (Thorpe) and David Elmore. She graduated with the class of 1988 from Goodland High School, and attended Northwest Kansas Vocational-Technical School in Goodland.
On December 10, 1994, she and Gary Duane Pancake were married at Sharon Springs, and they made their home in rural Sharon Springs. She had worked as a dietary aide for ten years at Prairie Manor in Sharon Springs, before becoming the manager of the cafeteria for Weskan USD 242 schools.
She was a member of First Christian Church in Goodland. Activities that she enjoyed were reading, bowling, cross-stitching, working puzzles, playing Bunko, watching car racing and especially her son Cody drive the #40 car in both sports mod and hobby stock divisions races, driving the combine at harvest, traveling, and especially being with her family and friends.
Preceding her in death were her parents.
Surviving family includes her husband Gary Pancake, their son Cody Pancake, both of Sharon Springs; brother Emery Elmore of Goodland; and father-in-law and mother-in-law Jack and Georgia Pancake of Sharon Springs.
The memorial service will be Friday, March 15, 2013, at 2:00 PM MT, at the United Methodist Church in Sharon Springs, with inurnment following in the Sharon Springs Cemetery.
